Cottage Cheese Frittata

Ingredients (serves 4):
6 large eggs (or 12 egg whites)
200 g cottage cheese
75 g shredded Parmesan
1 tbsp olive oil
1 medium onion
4–5 medium mushrooms, sliced
5–6 asparagus spears, chopped
½ medium red bell pepper, chopped
50 g fresh spinach
2 garlic cloves, minced
Salt & pepper, to taste
Fresh basil and chives, for garnish
Process:
Preheat oven to 190 °C (375 °F).
Heat oil in an oven‑safe skillet; sauté onion, mushrooms, asparagus, and bell pepper ~4 min.
Add spinach and garlic; cook ~1 min until wilted, season with salt/pepper.
Whisk eggs, cottage cheese, and Parmesan until smooth; pour over veggies in skillet.
Cook 1 min on stovetop to set bottom, then bake 12–15 min until center is set.
Garnish with herbs before slicing and serving warm.
