Cottage Cheese Frittata

Ingredients (serves 4):


  • 6 large eggs (or 12 egg whites)

  • 200 g cottage cheese 

  • 75 g shredded Parmesan

  • 1 tbsp olive oil

  • 1 medium onion

  • 4–5 medium mushrooms, sliced

  • 5–6 asparagus spears, chopped

  • ½ medium red bell pepper, chopped

  • 50 g fresh spinach

  • 2 garlic cloves, minced

  • Salt & pepper, to taste

  • Fresh basil and chives, for garnish


Process:

  1. Preheat oven to 190 °C (375 °F).

  2. Heat oil in an oven‑safe skillet; sauté onion, mushrooms, asparagus, and bell pepper ~4 min.

  3. Add spinach and garlic; cook ~1 min until wilted, season with salt/pepper.

  4. Whisk eggs, cottage cheese, and Parmesan until smooth; pour over veggies in skillet.

  5. Cook 1 min on stovetop to set bottom, then bake 12–15 min until center is set.

  6. Garnish with herbs before slicing and serving warm.
