Quark and Spinach Lasagna Rolls

These lasagna roll-ups are a comforting, high-protein dish that's perfect for a family dinner or meal prep. Instead of heavy ricotta, we use cottage cheese to keep things lighter while still creamy and satisfying. You can prepare the rolls in advance and reheat them easily in the oven or microwave. Kids love the soft texture, adults appreciate the balance of carbs and protein — and the spinach gives it a nutritious boost.
Ingredients (for 4 servings / 8 roll-ups)
8 lasagna noodles
1 ½ cups (340 g) cottage cheese
1 cup (120 g) cooked spinach, squeezed and chopped
1 egg
½ cup (50 g) grated mozzarella cheese
¼ cup (25 g) grated Parmesan cheese
1 ½ cups (350 ml) tomato sauce
1 garlic clove, minced
1 tsp dried oregano
Salt and pepper to taste
Olive oil or spray for baking dish
Instructions
Cook the pasta: Boil lasagna noodles in salted water until al dente. Drain and lay flat on parchment paper to cool slightly.
Make the filling: In a bowl, mix cottage cheese, spinach, egg, garlic, Parmesan, oregano, salt, and pepper until smooth.
Assemble the rolls: Spread 1–2 tablespoons of filling across each noodle. Roll gently from one end to form spirals.
Prepare the dish: Spread a few spoonfuls of tomato sauce at the bottom of a lightly oiled baking dish. Arrange roll-ups seam-side down.
Top and bake: Pour remaining sauce over the rolls and sprinkle with mozzarella. Cover with foil and bake at 180°C (350°F) for 20–25 minutes. Remove foil and bake 5 more minutes to brown the cheese.
Serve: Let cool for 5 minutes before serving. Pairs well with a side salad or steamed veggies.
